Heat the oven to Gas 4, 180°C, 160°C fan oven.
Heat the oil in a pan, add the onion and cook to soften for a few minutes, add the bacon lardons and sausages, and fry for 10 minutes until cooked throught, then stir in the chopped tomato.
Put the sliced tomatoes in the base of an ovenproof dish, top with the mushrooms. Arrange the slices of mozzarella on top of the mushrooms. Pour over the sausage mixture. Season to taste.
Bake for 20 minutes, until the mushrooms are tender.
Heat the garlic bread for 10 minutess, or according to pack instructions and serve.
