Mushrooms on toast for me recipe

Clean and roughly chop the mushrooms. In a pan melt the butter and oil over a medium heat, add a handful of fresh thyme, and a clove (or two whatever you fancy) of garlic, a good grind of salt and pepper and cook gently until tender.

Once cooked, add in the parsley and leave to stand for a minute while you toast the bread.

Spoon the mushrooms on top of toasted bread and serve immediately.

Tip: Cook the mushrooms gently to avoid burning the garlic. Use a tablespoon of dried mushrooms to add an earthy flavour to this dish.

  • 1 slice of good quality toasted brown bread, rubbed with garlic
