Chop the onion and celery, rinse and de-beard the mussels, discarding any which won't easily snap shut when tapped.

Put all the ingredients into a large saucepan, bring to boil and simmer with lid on until all shells are wide open and swimming in delicious liquid.

That's it! Serve with crusty bread.
