Make your hot dogs even tastier with homemade pickled red onion and a delicious honey and mustard glaze. To pickle the onion, mix the ingredients in a ceramic or glass bowl with 1tsp salt. Cover and leave for 1 hour.Prepare the glaze by combining the mustard and honey in a small bowl.Barbecue the sausages for about 10 minutes, turning to ensure even cooking. Spoon over the glaze and cook for a further 5 minutes. Alternatively, put the sausages in a roasting tin and cook in the oven at gas 4, 180°C, fan 160°C for 15 minutes.Remove the sausages from the oven and drain any fat from the tin. Spoon the glaze over the sausages and return to the oven for 5–8 minutes turning halfway through.To serve, spread the buns with mustard and top with lettuce, a sausage and some pickled onion.
