This dish is great for having family and friends over as its a dish where everyone can help themselves.
Preheat the oven to 190°C.
In a mortar and pestle add the cumin seeds and bash together until fine, then add smoked paparika, cayeene powder, chilli powder, garlic powder and mix together until blended. Add 2tbsp of olive oil and mix and rub the mixture over the skin of the chicken and inside the cavity.
Take the can of beer and pour half into a glass for yourself to drink while your cooking, or to keep for another time. Now position the chicken over the can by inserting the can into the cavity of the chicken. Place the chicken in the middle of the oven and roast for approx 1 hour 30 minutes or as guided on chicken packaging.
Whilst the chicken cooks start to prepare the sweet potatoes by cutting into wedges. Put wedges into an oven roasting tray cover with a little cracked black pepper and salt and insert in oven with twenty five minutes of the chicken cooking time remaining.
Cut the ciabbatia rolls in half add the chopped garlic to the melted butter and brush on to ciabattia bread and bake in oven for 10 minutes.
Once the chicken is cooked take from oven and let it rest for a minute before removing the beer can using an oven glove. Be careful doing this as the beer can is very hot. Divide the chicken into portions i.e legs and breast it should be easily done as the chicken is so tender.
Take the sweet potaoes wedges and garlic ciabattia from oven and put on serving bowls for centre of table and let your family or friends tuck in and watch the food disappear!
