My Mum's Goat Cheese and Spinach Tart

My Mum used to make this many moons ago when she owned a Salad House in Fleet Street! Every day she would cook loads and we used to get queue‘s outside her eaterie with customer‘s waiting for them to come out of the oven! This one is my favourite of all, and I‘ve been baking it ever since! Give it a try, you won‘t be disappointed!

Roll out the pastry and line an 8“ greased tin. Layer in all the ingredients except the eggs and cream. Whip the eggs and cream together and a couple of tbspns of milk and pour over the mixture. If there‘s too much, add once the filling starts to set to give a deep quiche filling. Cook for approx 40 mins Gas 3!

Don‘t be tempted to put the gas higher or your pastry bottom will be soggy and the mixture runny. Oh, and don't forget to season your mixture or otherwise you will have a tasteless filling! We love this quiche at home, it‘s one of our favourites!
