Nachos with homemade chilli recipe

Top your homemade spicy chilli with a generous dollop of delicious, low-fat Light Choices Onion and Chive Cottage Cheese and serve with salad and crunchy nachos.

Chop the onion into small pieces. Dry fry the beef mince in a large saucepan until just browned then add the chopped onion. When the onion starts to soften up a little, drain off any fat. Stir in the tablespoon of tomato puree and add the can of tomatoes. Rinse the red kidney beans in water, drain and add to the pan. Add the crushed chillies.

If you're not already at the lowest temperature, bring it right down, and cover the saucepan. Leave for 10 minutes but stir occasionally.

Serve the chilli in bowls, load it up with the Light Choices Onion and Chive Cottage Cheese and serve with a green side salad and crunchy nachos.

Health tip

For a lower fat and saturated fat recipe use extra lean mince. If you are watching your fat or salt intake go easy on the nachos or have a little plain boiled rice instead.

  • 500g pack of Tesco lean beef mince
  • 1 medium onion
  • squeeze of tomato paste (approx. 1 x 15ml spoon)
  • 400g can of chopped tomatoes
  • half a can of red kidney beans in water (200g)
  • 1-2tsps crushed chillies, depending on how hot you prefer
  • 240g Light Choices Onion and Chive Cottage Cheese
  • pepper to taste
