Peel the potatoes for mashing, and add to a pan of boiling water. To make the dough mix together the flour and salt. Add 2tsp of oil and the warm water and mix until a dough is formed. Turn out the dough onto a lightly floured surface and knead two or three times until smooth. Cover the dough with cling film and allow to stand for 15-20 minutes.
Fry the bacon in a large pan, remove and dice. Once your potatoes are cooked, approximately 12 minutes, mash them in the pan seasoning well. Add the cheddar, cream cheese and diced bacon. Allow the filling to cool whilst rolling the dough. Roll the dough on a floured surface to approximately 0.5 cm thick.
Using a glass cut circles of dough. Place a teaspoon of cooled filling into the centre of each pastry disk, fold over the pastry to seal the filling. Seal the edges with oil. Repeat until all the filling is used.
Bring a large pan to the boil. In a separate pan fry the onions until translucent. Cook the Varenyky in the boiling water for 4-5 minutes. Remove the Varenyky from the pan and toss in the cooked onion.
Serve immediately, these are a great snack or starter.
