adding lots of vegetable and getting the children involved is very important to me. This recipe is easy and cheap to produce. you can use any vegetables you have in the frigde and substitute them for those in the recipe if necessary.

add onion chopped onion, sliced courgette, sliced carrots, crushed garlic, basil, oregano and red pepper to a saucepan and fry until soft and golden.

add mince and stir a little. Making sure the meat has colour.

drain any excess fat

add tomatoes, stock pot and puree. turn heat down and simmer untill sauce has reduced a little. season.

cook pasta in slightly salted water.

drain pasta and serve in a nice wide bowl.

alterniaively toss pasta in with sauce and coat. this recipe is good for my children as they can help prepare it all including the vegetables. it is also very colourful.
