This is my nana's recipe and it comes from the 1920's. She kept chickens in the back yard for eggs but butter would have been expensive hence the need for a no-butter cake. Having said that it's really nice to spread a slice with butter like a tea bread!

Mash bananas with a fork.

Add the sugar and mix.

Add the eggs and mix well. This will be a very runny consistency.

Now add the flour and cinnamon gradually and beat until ou get a smooth batter.

Put the batter in a loaf tin and bake at 180C for approx 45 mins.

Use very over-ripe bananas, this is a great recipe for using up manky ones from the bottom of the fruit bowl!
