Pre heat the oven to 220°C.
Take some tin foil, enough to cover the cod with plenty of room for the addition of the sauce. Drizzle a small amount of olive oil on to the middle of the foil and place the fish on top. Season with salt and pepper, fold the sides of the foil up to make a Parcel bag scrunch together the sides and fold over top.
Place on a tray and bake in the oven for 10 minutes.
To make the sauce, in a medium frying pan cook the bacon until slightly crispy add the mushrooms, cook until starting to brown, then add the garlic, cook for a few minutes. Add the chopped tomatoes, tomato puree and mixed herbs and season well. Reduce until the sauce has become lovely, rich and thick.
Once the sauce is ready, your fish should be part cooked, remove from oven and open the foil. Divide the sauce equally between the cod parcels; add a handful of olives to the parcel. Re seal the parcels and place back into the oven and cook for 20 minutes.
After 20 minutes remove from the oven, tear open the foil bag, serve with cheese of your choice and the fresh basil.
Make sure that you bag is tight, you don’t want any leaks! If you have no foil, you can always use an oven proof dish with a lid.
Serve straight from the foil parcels add cheese and basil upon serving.
And as a major plus - you only have one pan to wash up after! Brilliant
