Nona's spare rib tomato sauce recipe

Heat olive oil in large sauce pan. Add the onions and sweat for a bit, to soften. Next add the spare ribs browning them off as much as you can and then pour in the passata. Add the garlic and basil leaves and season to taste.

Bring to boil and turn down to a gently simmer for 50 minutes. (Alternatively pop in the oven at 180°C, 160°C fan, Gas 4 for 50 minutes.) Keep stiring whilst cooking, if cooking on the hob and once ribs are soft turn off.

Cook some pasta and pour sauce over the pasta. Then put ribs in a bowl in the middle of the table and everyone helps themselves!

Tip: For extra flavour add 5tbsp chilli tomato ketchup.
