To a hot pan add the olive oil, quickly followed by the onion and gently fry for about 5 minutes or until softened.
Remove from the pan and allow to cool. In a separate bowl mix together the sausage meat, lemon zest, breadcrumbs and herbs. Add the cooled onion and the beaten egg and mix well.
Lay each rasher of bacon on a board and gently stretch out with a knife to about double its original length.
Divide the mix into 12 equal pieces. Press each piece around the skewer to form a sausage shape.
Wrap each of these with a rasher of bacon and then either roast with the turkey for 20 minutes, or separately seasoned with cracked black pepper.
