Came up with this recipe just by messing about with chicken breast diced, tried it as a whole piece piece, in the oven and it didn‘t work. Saw a chef cooking chicken in a wok and eureka it tried the that way and it is fab!!
500g chicken breast - diced
1 red onion- finely chopped
Garlic (to taste ) I would use about 3 cloves!
Olive oil - good few glugs, don‘t be shy with it, (no need for fancy extra virgin)
Salt & pepper
About a 2 teaspoons of the above, roughly a third paprika, and make up the rest to taste
Finely grated mozzarella
Marinade all the above, except the cheese, the longer the better! There should be enough olive oil so that the marinade is not grainy when you mix it all through and will allow you to cook it all in a large non stick pan.
Boil the kettle and get some spaghetti or other type of favourite pasta on the go, shells or that type of pasta don‘t work as well.
Heat up your large NON STICK pan and add enough chicken and marinade to allow you to cook It all without it overlapping in the pan. I have a large pan and can‘t really do more than 3 servings in one pan. It should take no more 5 mins to cook..
Drain the pasta and add to the pan mix through with mozzarella and serve
Dead easy :-)
OR you can cheat and use the same amount of Schwartz perfect shake chicken seasoning!!
If you let it marinade for a couples of hours (or over night) the chicken really absorbs the flavour :-)
