Heat the oil
Fry the onions for 5 minutes
Put a third of the onions on a tray in a medium hot oven to crispen. This is to top the curry.
Add curry paste, garam masala, chilli and garlic to the pan and fry for 1 minute
Add the rice and fry for 2 minutes
Add stock and bring to the boil
Reduce heat to low and cook for 10 minutes
Season with salt and pepper
Add the fish on top of the rice, cover and cook for 15 minutes
The rice should be cooked through, stock absorbed and Fish lightly steamed and flaky. Mix gently and serve
I always add leftover veg that needs using up. I added a pak choi before adding the fish.
Serve on its own or with naans and indian snacks
