This is an easy one-pot, nutritious, winter-warming recipe enjoyed by all the family.

Pre-heat the oven to Gas 4, 180ºC, fan 160ºC.

Heat the olive oil in a large non-stick frying pan on a high heat and add the minced lamb. Once the meat begins to brown, add the chopped leeks, garlic, sage and salt and pepper and continue to fry until the mince is evenly browned.

Take a large ovenproof casserole dish and, using a slotted spoon, make a layer of mince in the bottom followed by a layer of carrot and potato. Continue alternating layers, finishing with a layer of potato to top the dish. Pour the stock over the dish and carefully place into the oven. Cook for 45 minutes to 1 hour until the stock has been absorbed and the potato top is golden and crisp.

Serve with crusty bread and a dressed watercress or rocket salad.
