Preheat oven to Gas 3, 170°C, fan 150°C. Grease and line a 900g (2lb) loaf tin.
Put the yogurt, sugar, self raising flour, olive oil, eggs and all the zest and juice of 1 lemon into a processor. Whiz to combine.
Bake for 1hr 30 minutes until skewer comes out clean. (If the top of cake starts to brown too much cover with foil).
Cool slightly in tin, prick cake all over and pour the remaining lemon juice over the top.
Tip: Buy a single person size tub of natural yogurt and use as the measure for the recipe. Alternatively, use a tea cup.
