Orange Frosted Carrot Cake recipe

Heat oven to 180*C, 350*F, Gas mark 4.

Mix the flour and mixed spice in a large bowl, then stir in the sugar and grated carrots.

In the centre of the dry ingredients in the bowl, add the milk, eggs and oil, then using an electric whisk, mix all the ingredients together until evenly blended.

Place the mixture in a greased and lined 28cm x 18cm / 11 x 7 inch oblong tin and bake for 40-45 minutes.

When the cake is cooked, turn out from the tin and cool on a wire rack.

To make the orange frosting, melt the butter, orange juice and rind in a saucepan, then beat in the icing sugar until blended.

Using a fork, swirl the frosting over the cooled cake and cut it into 12 squares.

If you prefer, you can slice the cake in half, and sandwich the frosting through the centre, or why not make individual cup cakes, but you will need to reduce the cooking time.
