I like this recipe because the orange flavour give the cake a nice and refreshing taste.
Cream butter and sugar using and electric hand whisk till the mixture is light and fluffy.
Whisk in the egg one at a time till the mixture is creamy.Add in the orange rind and half of the orange juice. Fold in the flour with a metal spoon.
Transfer the mixture into 2X 22 cm. round prepared sandwich tins. Bake in the oven for 180C/350F/ Gas Mark 4 for 25 minutes. Leave to cool.
Whisk the Chantilly cream together with the rest of the orange juice. Sandwich the cake together with the orange cream. Dust the top with icing sugar.
Lemon can be used instead of orange
