Heat 1tbsp of sesame oil in a frying pan and when hot add about 70% of the chopped garlic. Then add the Basmati rice and fry with the garlic for approx 3 minutes being careful not to burn the garlic. Transfer the rice and garlic to a deep pan and add the cooled chicken stock to this, give it all a quick stir and heat on the hob on a moderate heat til the stock just starts to boil.
Turn the heat down to low so that the rice, garlic and chicken stock is simmering. Give it one more stir and then put the lid on and cook for 15 minutes (til the rice is soft and fluffy).
Whilst the rice is cooking, heat the remaining 2tbsp of sesame oil in a frying pan and when hot add the remaining chopped garlic and chopped onion, cook for a couple minutes. Then add the cubed chicken and cook until it just starts to brown, then add the Mangetout and cook for a further 4 minutes.
Lastly add the beansprouts and the light soy sauce and cook for 2 minutes, ginally all you need to do is plate up the rice and chicken and enjoy!
Tips: The Basmati rice should be rinsed prior to use but do try to drain off as much of the water as possible.
Garlic burns easily so do keep an eye on it and keep it moving in the pan! Y
You may want to check on the rice after 10 minutes to check if it's nearly ready, if you think it'll need longer than the 15 minutes simmer then let it simmer but keep checking on it!
