Heat the oven to 200C (180C fan) Gas 6. Pierce sausages with fork and cook for 30 minutes.
Cook the potatoes in boiling salted water for 20 minutes until tender.
Heat the oil in a frying pan, add the onions and cook gently for 10 mins to soften and lightly brown.
Drain the potatoes, when tender and return to the pan.
Add the milk,butter and double cream. Season with salt and ground black pepper and mash together, then mix with a wooden spoon until smooth.
Add the gravy granules to the onions with the boiling water. Warm through to make a smooth thickened gravy.
Serve the creamy mashed potatoes with the sausages and onion gravy.
