Pancake with Sugar and Fresh Lemon

I like to make these pancakes for the family on pancake day for the family to enjoy

Place flour and salt in a bowl. Put the egg in the centre. Use an electric beater and beat the milk into the flour a little at a time till it form a smooth batter.

Heat 1/2 a teaspoon of oil in a frying pan. Pour a ladle of batter into the pan. Spread the batter around to cover the pan. Cook for a minute and turn the pancake over to cook the other side.

Lift the pancake up on a plate to keep warm. Repeat the same with the rest of the batter.

To serve: Squeeze a little lemon juice onto each pancake. Sprinkle with caster sugar. Roll the pancake up and enjoy.
