Eating this, on the streets of Thailand, with my girlfriend just made our holiday. So much in fact, she's mentioned if we ever got the chance married, it would in fact be in Thailand with this dish being served with a large Chang and grilled chicken!
It's sour, sweet and so refreshing - I promise you, you won't be dissapointed!
Put the fish sauce, lime juice, chiles, garlic and palm sugar in a pesle and mortar, and bash it into a fine paste.
Shred the Papaya and add it with the green beens, tomatoes to the pestle and mortar and continue to work it until everything is coated.
Finally add the rest, continue to mash the mixture for another 20-30 seconds and serve!
There's really no right or wrong way with this recipe. I've seen it prepared on the streets of Thailand and is incredibly tasty! You can add more chopped chilli or tweak it easily to your taste?
