using a sharp knife pierce a hole in thick end of chicken fillet,fill with mozzarella cheese.wrap in parma ham to seal edges bake at 180c for 25/30 mins.slice leek put in microwave dish and cook for 5mins on high.thinly slice potatoes place layer on leeks with knob of butter then add another layer potatoes and butter season to taste.Cook on high for 5mins test if soft,repeat if necessary.serve with seasonal veg of choice

you can cook this for 1 or a family of 4 just increase leeks and amount of potatoes to suit.Leek bake can be cooked in advance and reheated for 5mins just before chicken ready.
