Heat oven to 180C. Place the cod fillets on an oiled baking tray
Slice the tomato thinly and lay slices over the fillets
Grate the parmigiano finely and mix with the breadcrumbs
Sprinkle over the tomato and fish
Place on centre shelf in oven and cook for 20 minutes until the fish is cooked and the crumb topping is golden.
You can use any grated hard cheese, although, because the parmigiano is a lovely strong flavour, you get a great taste without too many calories.
Bake a potato in the microwave whilst the fish is cooking and serve with mixed salad leaves. Enjoy!
