Whisk the fresh cheese until it reaches a soft and frothy consistency. Add the Parmigiano-Reggiano, salt, pepper and whipped cream. Finally, add the nutmeg and chives to taste.
As an alternative option to chives, you can use other herbs and spices such as green pepercorns, paprika or a mix of minced basil, garlic and thyme. The cheese mixture should be creamy and can be used as a spread on bread or as a filling for vol-au-vents or savoury cream puffs.
