I just thought that the ready cooked ones were stupidly expensive so devised my own recipe for them!
Peel parsnips and cut thinly slices using peeler.
Cover a baking sheet in baking paper and lay on the parsnip chips.
Brush lightly with olive oil and add salt.
Roast for ten minutes.
Turn over and repeat on other side.
Allow to cool before serving.
You can use the same recipe to make fresh beetroot and carrot chips and these three are great when mixed together!
