Preheat the oven to 180° C.
Peel and slice parsnips, parboil until slightly tender. Peel tomatoes and slice.
In an oven ready pot, layer some parsnips, then tomatoes, then some of the grated cheese - repeat this step twice.
Pour all the cream in to the pot and top with breadcrumbs and sugar. Place in the oven for 20/25 minutes.
Serve with salad and some fresh crusty bread.
