sift all dry ingredients and mix well = add lemon juice and then slowly add water making a thickish batter
in a separate dish add you vegetables and chopped leaves - slowly mixing in batter - try not to have too much excess batter
having heated oil to really hot temperature - uaing a teaspoon - carefully pour misxture in pan - being very careful as will start cooking straight away - cook approx - 5 lots each time until light golden brown
put onto kitchen roll to drain
serve immediately with various dios - tamarind - sour cream
let the batter stand for 15 mins
test oil for right temperature by dropping tiny bits of batter in - need it to sizzle straight away
