Melt the butter slowly in a pan before mixing in the crushed biscuits. Press this mix into a 9“ circular dish or cake tin. Leave in the fridge to cool for 30 minutes.
Whisk the cream cheese and icing sugar in a bowl until well mixed.
Lightly whisk the cream and fold this, plus the flash of 3 passion fruits into the cream cheese mixture.
When well mixed, spread this mixture over the biscuit base, smooth with a palette knife until it lays flat.
Leave to set in the fridge for 2 hours and it will be ready to serve!
