salmon pasta salad HERO

Place the salmon fillet in a small dish suitable for the microwave, cover with clingfilm, and then microwave on high for 1-1½ minutes until fish flakes easily. Cool then break into large flakes.

Boil the pasta in lightly salted water for 10 minutes. Then add the frozen soya beans or peas and bring back to the boil. Drain well.

Peel and segment the orange. Squash a couple of segments to give you a tablespoon of orange juice. Mix with the crème fraîche, season, and add the chopped herbs.

Mix the fish, pasta, spinach and orange segments together and toss lightly with the crème fraîche dressing. Pack into a plastic container and keep chilled until served.

Top tip:
If your children don't like salmon use cubes of cheese instead and try swapping spinach for iceberg lettuce
