Chop tomatoes, rocket and fresh herbs and put in a large casserole dish or pan. Crush the garlic cloves by putting them under a chopping board and push. Add the crushed garlic, dry herbs and olive oil to the casserole dish / pan. Roast everything in the oven for 2 h in 20 degrees.
When ready serve with roasted pine nuts and parmesan shavings.
