In a large frying pan fry off the diced pancetta until brown, remove and set aside. In the same pan heat the olive oil and sweat off the onion. Add the frozen peas and stock, bring to the boil and simmer for 10 minutes.

Pour the mixture into a blender and blitz until smooth. To serve sprinkle over or stir in the pancetta.
