I like to experiment and try new recipes, on deciding to try this out I was missing an ingredient so I switched it and it was really tasty.
Mix water and stock cubes.
In a large pan add peas, seasoning and ham stock cubes.
Roughly chop mint and add to pan
Bring to boil and simmer for 10 mins
puree soup with a hand blender or pour into a blender.
pour into bowl and spoon over fresh cream with sprig of mint
