Christmas side dishes don't come much easier than this. With just a few ingredients you can transform your frozen peas into a vibrant side dish packed with flavour.
Heat the butter, garlic and rosemary in a frying pan.
Add the stock and leave to bubble away, until slightly reduced.
Stir in the peas and cook for 2-3 minutes, until warmed through. Scatter over the mint and finish with a squeeze of lemon and some seasoning, to taste. Serve with Christmas dinner.
