Penne Medley recipe

This is so easy to make and can be easily doubled if you have a big party to feed!

Cook the garlic and onion in the oil, add the mince and stir to brown. Add the tomatoes and stock cubes and simmer for around 30 minutes.

Add the sweetcorn, peppers and peas. Stir and leave to simmer for another 20 minutes, then add the tomato puree. Cook the penne in salted boiling water till tender, drain and freshen with hot water. Add to the mince mixture.

Carefully stir together, sprinkle with cheese and parsley and serve!


It really doesn't need anything to be served with it, but a crunchy salad can be nice to complete. Also there is barely any washing up, as it is all cooked in one big pan!

  • 1 tin sweetcorn, drained
  • 2 cups frozen peas
  • 6 oz grated cheese
  • bunch flat parsley, chopped
  • 1 packet fresh Penne pasta
  • 3tbsp oil
  • 1 red pepper, thinly sliced
