Prepare the sauce by heating the olive oil in a large saucepan set over a medium heat. Sweat the onion and garlic for 5-6 minutes, stirring occasionally until just softened. Add the red pepper and continue to cook for a few minutes, stirring frequently. Add the chopped tomatoes, sugar, oregano and seasoning and simmer for 10-15 minutes until thickened and reduced.
Meanwhile, bring a large saucepan of salted water to the boil and cook the penne for 8-10 minutes until 'al dente.' Drain the pasta well and divide between 4 serving plates.
Stir the ham slices through the sauce, then divide half of it between 4 serving bowls. Spoon the rest of the sauce on top of the pasta before serving.
