Put the pepper halves into the oven and cook for approximately 10 minutes on Gas mark 5 until almost tender.

Whilst they are cooking, melt the margarine and cook the chopped mushrooms. Add the cooked rice and tomato, season. Add the goats cheese and half the cheddar. Fill the peppers with the rice mixture, scatter the rest of the grated cheese on top and bake in the heated oven for around 15minutes until browned. Decorate with the parsley and serve!
