This is really quick and easy to prepare and makes an excellent lunch with a glass of wine

Slice the peppers length ways and remove seeds, tear a few basil leaves and place on peppers.

Spread a selection of houmous - lemon and coriander, red pepper over the peppers and top with halved cherrry tomatoes.
