A simple to make and flavourful side dish that takes just half an hour to make.
Cut the peppers into rounds. Heat the olive oil in a large nonstick pan and add the pepper strips, garlic, lemon zest and olives.
Cook, covered, over a low heat for 20 minutes, until the peppers are tender. Stir in the lemon juice and basil. Enjoy hot or at room temperature.
Serve with some crusty bread.
