My wife *loves* roast potatoes! So over the years I‘ve tried many different ways to satisfy her, finally settling on this pretty simple method that has produced thousands of really tasty roasties. Tesco Maris Piper potatoes always provide reliable results.

Typically you‘ll already be roasting a joint of meat when you want to cook these potatoes, so only worry about having the oven at the right temperature for that, just put the potatoes as high as you can. 200C/gas mark 6 is fine.

Peel the potatoes and cut into pieces no bigger than an egg. 4 pieces per person is generous.

Bring a saucepan on water to the boil, add the potatoes, a pinch of salt, and bring back to a vigorous boil for 8 minutes.

Drain the potatoes and give the pan a little shake to fluff up the outsides.

Add a good measure of sunflower oil to a high sided baking tray, enough to form a few millimetres of depth across the entire base. This isn‘t health food, it‘s an end of the week treat! Heat the tray over the hob for 30 seconds until really hot and add the potatoes. You want a ferocious spitting when you add the potatoes so that it seals everything in. Baste the potatoes until thoroughly covered and place in the oven.

Turn every 10 minutes or so to get an even browning. 45 minutes in total should be long enough, but judge it on colour more than anything. Just make sure in the last 10 minutes of cooking you drain off any excess oil otherwise it can get sucked back in and make the insides greasy.
