A picnic food that uses lots of veggies to help boost your 5 a day count.
Using Tesco Finest Fusilli Lunhi Col Buco pasta. In a large saucepan of boling water boil the amount of pasta you want ( I used 1/3 of the packet approx. 350g) for 8-10 minutes. Drain and put the pasta back into the pan.
Whilst the pasta is cooking prepare the vegetables. Chop and slices some mushrooms, an onion, a red and green pepper, two courgettes and a handful of cherry tomatoes. Fry these in a little olive oil.
Add a tin of chopped tomatoes to the pasta and heat through for two minutes.
Add the cooked vegetables to the pasta and heat through.
Cool and put into a suitable bowl for your picnic.
Other vegetables can be used to suit your taste and if you wish you could add kidney beans at step 3 for protein and / or cubes of feta cheese at step 4.
