Perfect salmon pesto parcels recipe

This dish was inspired by me wanting to try something new with salmon. I love pesto so thought I could use the two ingredients together to create a delicious dish!

Boil the green beans for 5 minutes in a saucepan, then remove onto a plate.

Prepare 4 sheets of tin foil - cut large squares about 50cm x 50cm.

Cut the salmon fillet into 4 even sized pieces and season with salt and pepper.

Place 1/4 of the green beans in the centre of one the sheets of tin foil, then place a salmon piece on top. Do this with the other 3 sheets of tin foil.

Put a tbsp of green pesto onto the top of each salmon piece.

Drizzle some lemon juice and olive oil on top of the salmon piece.

Turn each piece of tin foil into a parcel by folding the sides into the middle and scrunching the tin foil so the salmon is completely encased with no gaps.

Bake in the oven at 180 degrees Celsius until salmon is cooked (about 20-25 mins).

While salmon is cooking prepare the side dishes of baby potatoes (boil in water for 15 mins) and mixed leaf salad.

This dish is also nice served with broccoli instead of salad. You could also try red pesto instead of green and experiment with different types of fish - cod also works well!
