Preheat the oven to 200°C.
Remove all excess fat off chicken breast and season with a little salt and black pepper. Smother chicken with the pesto about 1tbsp on each and leave for 10 minutes to infuse with flavour.
Place a generous slice of mozzarella on each breast on top of the pesto then wrap each breast in the Parma ham about 3-4 slices needed depending on size of the chicken breast. Place the chicken breasts on a baking tray and cook for about 30 - 35 minutes or until piping hot.
Leave to rest for 5 minutes before serving. Serve with seasonal vegetables and sautéed potatoes
