Preheat your oven to 180°C, 350°F, Gas mark 4.
Use a processor to blend the bread into breadcrumbs. Add the jar of pesto to the breadcrumbs and stir in until evenly covered. Season the salmon fillets with salt and pepper and then top with the pesto breadcrumbs.
Bake in the oven for 20 minutes or until the breadcrumbs turn golden brown.
Add the pesto to the breadcrumbs gradually and gage how much to use - you want the breadcrumbs to be evenly covered with pesto but not swamped.
Serve with rice or potatoes with lots of healthy vegetables.
