I grow a lot of beetroot in my garden. In the summer I pick them and pickle them and give them to other people. They made really nice gifts.
Cut the tops and tails off the beetroots. Put them in a large pan of water. Boil the beetroo for 20 to 30 minutes till soft.
Leave to cool. Peel off the skin and cut thebeetroot into slices. Pack them into jars.
Heat the vinegar with salt and pickling spice. Pour the pickling vinegar into the jars with beetroot. Cover and leave for a week. The pickle beetroot is now ready.
Use the smaller beetroots. Tehey always taste sweeter.
