Heat the olive oil in a saucepan then add the onions, lower heat and cover, allowing to simmer for 10 minutes.
Remove the lid and add remaining ingredients. Stir and simmer 25 minutes.
Serve chilled or at room temperature with some crusty bread, Manchego cheese and serrano ham.
