Pre-heat the oven to Gas 4, 180°C, fan 160°C.
Put a large pan of salted water on to boil while you peel and chop the potatoes. Add the potatoes to the boiling water and boil until soft. Mash until you have a smooth mash then set aside.
In a separate pan, dry fry the mince.
Once the mince is browned, add the tinned tomatoes, tomato puree, beans, vegetables, crumbled stock cube and salt and pepper to taste.
Bring to the boil and simmer for 10-15 minutes until thickened. Pour into a large, oven-proof dish, top with the mash and a sprinkle of grated cheese.
Cook in the oven for 20-30 minutes.
