Sieve the flours and salt into a mixing bowl, stir in the sugar, 1tbsp oil and yeast.
Add the warm water to the flour and use a palette knife to mix into a dough
Knead on a floured surface for 5 mins until soft and stretchy
Roll out the dough into a round (about 25 cm) then place on a floured baking tray and place in a warm place to rise for around 10 mins
Fry the onion with the rest of the oil for a few minutes, to soften.
Add the canned tomatoes, and tomato puree and cook gently for 5 mins.
Spread the tomato sauce over the pizza base, arrange the cheese, pepperoni and olives on top. Season and scatter with marjoram.
Bake for 20-25 mins until pale golden and the base firm.
Vary the topping ingredients according to what you have in stock.
