Toast the slices of white bread.
Place the grated cheese, mixed herbs, black pepper and chopped mushrooms into a bowl and mix together.
Spread the tomato purée on the toasted slices of bread. Place a generous helping of the cheese mixture across the 4 pieces of toast.
Place under a grill until the cheese has evenly melted (around 3-5 minutes). Best served straight from the grill.
